{"id":685,"date":"2023-01-11T00:48:03","date_gmt":"2023-01-11T00:48:03","guid":{"rendered":"https:\/\/graywolfslair.com\/?p=685"},"modified":"2023-04-07T13:29:39","modified_gmt":"2023-04-07T13:29:39","slug":"18-3-1-test-13-f-extracting-wild-blackberry-concentrates-from-spent-pulp","status":"publish","type":"post","link":"https:\/\/graywolfslair.com\/index.php\/18-0-the-vacuum-cooking-and-aluminum-bead-sous-vide-test-sled\/18-3-produce-food-concentrates-extracting-and-boiling-at-low-temperatures-under-vacuum\/18-3-1-test-13-f-extracting-wild-blackberry-concentrates-from-spent-pulp\/","title":{"rendered":"18.3.1 Test 13 F-Extracting wild blackberry concentrates from spent pulp"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\"><strong>Wowza, shazam!&nbsp; What an intensely flavorful extract!!<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">I extracted concentrate from spent wild blackberry pulp, after squeezing the berries for juice, that both Grayfox and I found delightful and my Le Cordon Bleu chef tester friend said it came as close to tasting exactly like the fresh black berries it came from as he had sampled.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"908\" height=\"1024\" src=\"https:\/\/graywolf.moveweight.com\/wp-content\/uploads\/2023\/04\/Blackberry-concentrate-908x1024.webp\" alt=\"\" class=\"wp-image-2109\" srcset=\"https:\/\/graywolfslair.com\/wp-content\/uploads\/2023\/04\/Blackberry-concentrate-908x1024.webp 908w, https:\/\/graywolfslair.com\/wp-content\/uploads\/2023\/04\/Blackberry-concentrate-266x300.webp 266w, https:\/\/graywolfslair.com\/wp-content\/uploads\/2023\/04\/Blackberry-concentrate-768x866.webp 768w, https:\/\/graywolfslair.com\/wp-content\/uploads\/2023\/04\/Blackberry-concentrate-1363x1536.webp 1363w, https:\/\/graywolfslair.com\/wp-content\/uploads\/2023\/04\/Blackberry-concentrate-600x676.webp 600w, https:\/\/graywolfslair.com\/wp-content\/uploads\/2023\/04\/Blackberry-concentrate-jpg.webp 1800w\" sizes=\"auto, (max-width: 908px) 100vw, 908px\" \/><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>The essence of blackberries<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">We learned from cannabis that terpenes, terpenoids, and flavonoids are where it\u2019s at from a flavor and aroma standpoint so what I did different was extract with a mixture of 50% 190 proof ethanol and 50% water to extract both the water-soluble flavonoids and only marginally water-soluble terpenes.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">After pressing and vacuum filtering, I then removed the alcohol and most of the water boiling under -23\u201d Hg vacuum, to keep the temperature below 66C\/150F, so as to minimize heat effects on the aromatic constituents and retain their individual flavors.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Experiment 3F<\/strong>&nbsp;Extract and concentrate the terpenes and flavonoids from fresh picked wild blackberry pulp, after the juice is squeezed out of it.&nbsp;<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Because blackberry seeds add unwanted flavors when fractured, I pressed the fresh berries instead of macerating them.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3F-1<\/strong>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; I started with fresh wild black berries handpicked by Moi on Oak Island in Sturgeon Lake, at the confluence of the Willamette and the Columbia rivers.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3F-2<\/strong>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; I smashed the berries by hand using a potato masher to avoid rupturing any seeds and pressed out the juice using a t-shirt rag for a juice bag.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>3F-3<\/strong>&nbsp;&nbsp;&nbsp;&nbsp;&nbsp;&nbsp; I soaked the left-over pulp in a 50\/50 mixture of water and Ethanol for an hour and after vacuum filtering, I removed the alcohol and reduced the water by boiling under vacuum.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The end result was that the combination of the ethanol and water extracting the terpenes and flavonoids provided a fuller spectrum extraction than water alone.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Wowza, shazam!&nbsp; What an intensely flavorful extract!!
